Hi — Adam here. Every Tuesday morning at 7:15 sharp, the door opens and in walks Mr. Johnson. He doesn't even need to look at the menu. He sits at the third stool from the left, gets his coffee black, and waits for his hash browns—extra crispy, just the way he likes them.

We hit a milestone this week: 15 years of Tuesdays. Mr. Johnson has been with us through three different coffee machines, two renovations, and countless happy birthdays. People like him are the reason I love this job. He knows the names of all our staff, remembers their kids' birthdays, and always has a kind word for the person sitting next to him.
