People think I'm crazy for waking up at 5:00 AM every single day, even on Sundays. But to me, there's no better time of day.

The city is quiet, the air is fresh, and the diner is still. I walk in, flip the lights on, and start the first pot of coffee. That smell... it never gets old.

"At the end of the day, a diner isn't just about the food — it's about the people on the stools next to you."

I open at 7:00 AM sharp because I know there are people out there who need that first cup before they start their day. The nurses finishing their night shift, the truck drivers heading out on a long haul, the parents who finally got the kids to sleep and just need fifteen minutes of peace.

Being that first stop for people is a privilege. It's my favorite part of the job.
